OPERATION UNIT IN FOOD INDUSTRY (2 Credits)

Learning Outcomes:

To provide the students an understanding on the system of food processing machinery and equipment include support operations, initial processing operation, mixing operations, and other mechanical separation.

Topics:

1. Units and dimensions system, thermodynamics, and energy balance in food processing, water vapor as a heat source, fluid flow, heat transfer, transfer period.
2. Material handling processes (Raw-material handling), size reduction, enlargement, material handling, separation by sedimentation, centrifugation-filtration, mixing-homogenisasi, extraction, evaporation, crystallization, distillation, drying, cooling, freezing, and extrusion.
